Wedding Cakes: FAQ

I’m looking for a fully customized, grand cake for my wedding. How does the process work?

I LOVE making custom showstoppers. I call them Fine Art cakes, because they really are uniquely breathtaking works of edible art. Honey Crumb is a one-woman show, so my recommended lead time for a Fine Art cake is 5-9 months. The process begins when you fill out my inquiry form, at which point I’ll check availability for your event. You’ll be invited to select flavors from my current menu to pick up and enjoy at home, on one of my upcoming biweekly tasting dates.

Either before or after your tasting, I’ll start up a conversation with you via email to review the design details for the cake and the logistics of setup for your wedding day. I’ll email over a proposal with transparent pricing, and if you choose to proceed with me as your cake artist, you would then submit 50% of the total as a non-refundable date reservation fee. The balance payment is due two weeks before your wedding, and if necessary, we can make any adjustments to the design and size of your cake before then. Final RSVPs are due three weeks before your wedding.

We’re eloping / hosting a very small reception. What should we do?

I know how to make simple & compact cakes with big visual impact and memorable flavor. My Micro-Wedding Cakes were specifically designed to meet this need, and the online store is the place to find them! There are lots of lovely options for you there, and I can (typically) have a cake ready for pickup with just 2 weeks of lead time, depending on my seasonal availability — though it’s always best to order at least 1-3 months ahead!

My wedding will be very simple and classic. And I’m on a tight budget. What do you recommend?

See above for details about the Micro-Wedding Cakes in my online store.

If you’re looking for something slightly more customized than what’s in my online store catalog, you could opt for one of my Classic & Simple cakes. This option will help you stay on budget and simplify the planning process, while allowing for more personalization than a catalog design. My recommended lead time for a cake like this is 1-3 months, but I can work with less lead time than that during the off-peak season.

For an even more budget-friendly option, you might consider purchasing a selection of Deli Cakes from my online store, and displaying them as a group on various pedestals on your cake table. Cake groupings like this can be so elegant and memorable (not to mention delicious)!

Can I have fresh flowers on my cake?

I do NOT use, or recommend the use of, fresh flowers on my cakes (or any cake, for that matter!). Commercially-grown flowers are typically sprayed with pesticides during their growth, and other chemicals during harvest and shipping. These contaminants are NOT food safe and have no place anywhere near a beautiful dessert that your guests will eat. Furthermore, some flower species are inherently toxic / poisonous, even if they’re unsprayed or organically grown. This includes common wedding flowers like hydrangeas, ranunculus, and anemones — among many others.

Instead, I exclusively use my own handmade sugar flowers, which are crafted in my studio one petal at a time. Each year, I spend countless hours researching botany and developing my flower-making skills — and I also share my knowledge with students around the world, via my online tutorials and in-person workshops.

My goal is not to compete with nature, but to celebrate its beauty and produce breathtaking adornments for our cakes.

In choosing sugar flowers for your cake, you are supporting me as an artisan in my quest to keep this remarkable art form alive and thriving. You’ll also end up with keepsakes from your event, as sugar flowers last forever if stored in a display vessel (e.g. an acrylic box or under a glass dome), away from direct sunlight and moisture.

I’d like to offer a dessert bar to my wedding guests. Can you help?

I focus exclusively on cakes, as they’re my “zone of genius”. I’d be happy to provide recommendations via email of some of my favorite bakers in Seattle who offer delicious mini desserts. I don’t have a sole provider / exclusivity clause, so you’re welcome to order desserts, cookies, cheesecakes, etc from any other bakery you love, in addition to getting a beautiful cake from me.

How should I display my cake?

Strictly speaking, you don’t need a stand, as all my cakes come on a coordinating display board (sometimes known as a “cake drum” in the industry). They can be placed as-is onto the cake table for an elegant look. Having said that, cakes always love a little added height, to make them extra-special. You can place a pedestal of your choice directly underneath the board (but please don’t try to remove the cake from its display board, as this will damage its exterior finish).

How do cake tastings work?

Sample my offerings at your convenience with a Cake Tasting, available for pre-order via email with 1-2 weeks’ notice. My biweekly tastings (for pickup to enjoy at home) have replaced all in-person private consultations since 2020.

I offer vegan (eggless, dairy-free) OR gluten-free samples upon request, for those with special dietary requirements.

Find more details about my Tastings here.

I don’t like very sweet cakes or frostings. Can you help?

All of the buttercream fillings (and exterior coatings) that I use for my cakes, with the exception of my vegan cakes, use Swiss meringue buttercream. This is far less sweet than a classic American buttercream, as it contains HALF as much sugar by volume. First, I prepare a silky meringue of egg whites and cane sugar, and then I carefully whip REAL butter into it to create a luscious emulsion (whereas a classic American frosting involves adding boatloads of powdered sugar to whipped vegetable shortening). Then I proceed to add other flavors — e.g. pure vanilla extract and a pinch of salt for my final coats, or many other variations for my fillings (e.g. raspberry compote, lemon juice, espresso, melted chocolate, etc). NOTE: Swiss meringue buttercream is very “butter-forward” in flavor, so if you grew up with American frosting, its butteriness may surprise (and hopefully delight) you!

Each of my cakes has a personality of its own. My vanilla and Earl Grey cakes are based on a sour cream sponge recipe and have a tight but very tender crumb. I can best describe their texture as sitting somewhere between a moist pound cake and a classic butter cake, rather than a super-fluffy (and drier) chiffon cake. My chocolate and carrot cakes are a bit more “squidgy” or fudgy, and my lemon cake has a more open crumb that resembles the texture of a cupcake. I carefully control the sugar in each of these recipes (since I bake from scratch and not from a box mix) to ensure that FLAVOR is first and sweetness is de-emphasized.

Can you make my wedding cake vegan or gluten-free (or eggless, etc)?

Absolutely, yes! All the flavors on my current menu are available as either a vegan or a gluten-free version. Clients avoiding dairy or eggs (or both) are encouraged to select the vegan option. For reasons of quality and prevention of allergen cross-contact, I do not offer cakes that are both vegan AND gluten-free at this time.

Additional fees for vegan/GF cakes vary based on the type of cake being ordered. For catalog cakes in my online store, there is a surcharge that amounts to ~$20 depending on the design you select. For “Fine Art” wedding cakes, “Classic & Simple” cakes, or custom-designed celebration cakes, the surcharge is $2/serving.
