Upcoming sugar flower workshop (limited to 8 students; ONLY 3 SEATS LEFT!):

Tuesday March 5th through Thursday March 7th, 2019 (three-day class)


During this hands-on workshop, you will learn how to create show-stopping sugar peonies (with various options for shaping the petals to create different looks), delicate sweet peas, gorgeous poppies (with easy size variations), as well as snow berries and leaves to round out the perfect sugar flower arrangement.

Carla will teach you how to work confidently with gum paste and how to use the most common tools for sugar flower making. You will acquire the skills and techniques for making these flowers, as well as learn how to add color to them using petal dusts and edible paint. You will also learn how to tape your flowers together into attractive clusters, and we'll then review the principles of securing your sugar flowers to an actual cake. 

You'll leave the studio with a selection of beautiful sugar flowers that are ready to apply to any of your own creations at home. You are encouraged to ask us any burning questions you have with regard to sugar flowers, cake baking and decorating, tools/equipment, and ingredient suppliers. Carla is also always happy to pass on her tips of the trade, as well as share some of the industry know-how she's acquired while running a successful cake business for the past nine years. 

Course duration: 10.00am – 4.00pm (all three days), with a break for lunch

Course location: Honey Crumb’s beautiful cake studio in lower Queen Anne

Summary of what you'll learn:

  • How to make and work confidently with sugar flower paste (also known as "gum paste"), including coloring your paste and storing it

  • How to prepare your workspace for clean, efficient creating

  • How to use specialized cutters and veiners to create flower centers, petals, buds, and leaves

  • How to add color to your sugar flowers using petal dusts and edible paint

  • How to assemble your flowers, group them together into arrangements, and attach them to a cake

  • How to charge for your sugar flowers, how to promote the art form to your clients (if you’re a professional baker), and how to build and store a stock of sugar flowers during the “slow” season for ease of use during peak season

All tools and materials will be provided for your use during the workshop. You are welcome to take photos during the class (as long as you don’t photograph the other students or their work without their permission!), and you will receive a supply list so that you can purchase your own tools and make your own gum paste at home once the class is over.

Carla loves to teach and is always happy to share her personal tips and tricks of the trade. Whether you’d like to hone your skills in the kitchen or create a unique group event for any special occasion — Carla will build a workshop to meet your needs. Content could include: baking, assembling tiered cakes, making sugar flowers, sculpting "3-D"/novelty cakes, creating fabric-inspired sugar ruffles, hand painting, or absolutely any other special technique you wish to learn.

Private and group workshops are held at Honey Crumb's beautiful Seattle cake studio -- or, if you'd prefer, in the privacy of your own home. Personal instruction is delivered in a friendly and relaxed manner, with all equipment provided, and classes are open to everyone -- whether you're a beginner with little to no experience, or a professional cake artist.

Carla's background as a college lecturer, combined with her decade of experience in the world of sugar art, has equipped her not only to teach you new techniques, but also to inspire you to find your own way as an artist.

Carla's day rate starts at $1,200 — and pricing depends on the specific techniques you'd like to learn and on the type of supplies/ingredients we would be gathering for your workshop. If you gather a group of friends together, you can split the cost of the day rate (e.g. $300 per person for 7-8 hours of instruction, for a group of 4). Minimum workshop length is 4 hours.
