I hope you all had a wonderful, laughter-filled Christmas, with lots of good food and family time. I'm so excited for the New Year, and all the beautiful and creative cake designs that will accompany it. Also, I'm looking forward to having my shiny new website up and running in a few days!
One of today's cake deliveries was to the Space Needle. Largely because I've only been a resident of Washington for a brief time, I had never been inside the "Needle" before! So, it was pretty exciting to get security clearance as a wedding vendor and to be allowed deep into the belly of the building, where I climbed into the service elevator with my huge cake box and rode up to the Skyline Level, with its 360-degree views of Puget Sound.
I loved this cake! So simple, clean, and timeless, topped with my favorite of all flowers to fashion by hand from gumpaste -- a huge, open peony. The cake is three tiers, with Royal Icing dots piped in a cascading style to resemble champagne bubbles (it is almost New Year's Eve, after all!). Some of the piped dots were painted with edible silver luster dust for sparkle.
All three tiers are rich chocolate cake with alternating layers of cream cheese filling and espresso buttercream, frosted with Swiss meringue buttercream (with a touch of cream cheese added for delicious tang), and covered in marshmallow fondant. Mmmmmm.
