Black, White, Red

I delivered a two-tier wedding cake to Sammamish this afternoon, in the rain. The quilted top tier with candy pearls at the intersections is Dalmation Cake (white cake with chunks of bittersweet chocolate) filled with truffle cream, frosted with vanilla Swiss meringue buttercream, and iced with black fondant. The square bottom tier is Caramel Toffee Fudge (chocolate sponge, caramel sauce, truffle cream, and crunchy English toffee bits), also frosted with vanilla Swiss meringue buttercream. The tier was covered with homemade marshmallow fondant and (carefully!) stenciled with black Royal Icing on all four sides.

My design brief was black and white, with red accents, and decidedly "no bows or flowers." The cake was displayed atop a shiny black grand piano, on a square chrome stand. The bride's mom added the spy topper on site, having painted the figurine's white bridal gown red, and her blonde hair dark brown, to match the real bride (yes, she wore a stunning red wedding dress!).
